Ingredients:
• 300 ground meat (we've used 1/2 beef and 1/2 lamb mince)
• 6 large potatoes
• 1 onion
• 1 egg
• 2 tsp turmeric
• 2 tsp advieh spice
• 2 tsp salt
• 1/2 tsp black pepper
• 2 tbsp chickpea flour / plain flour (optional)
• Vegetable oil for frying the patties
To make:
1) Parboil the potatoes and leave to cool
2) Once cool remove the skin and finely grate
3) Squeeze potatoes to remove any excess liquid
4) Grate onion and squeeze to remove excess liquid
5) Mix potatoes and onions, add ground meat, egg, turmeric, advieh, salt and pepper
6) Combine the ingredients and knead well into a smooth mixture
7) Let it rest, ideally for 30 mins in the fridge and then shape into oval or round patties and set aside
8) If you'd like, you can coat the patties in chickpea flour here if your mix is a bit wet
9) Pop oil in a pan on medium heat and fry the patties until crispy brown and well done on both sides
10) Serve with Persian bread, sabzi, torshi, tomatoes and a dollop of yoghurt
