You need to try these Persian Inspired Smashed Roast Potatoes. They are seriously delicious and the perfect lunchtime snack.

Cook Time: 1 hr

Ingredients:
Potatoes
Sumac
Pomegranate
Molasses (optional)
Tahina
Olive oil
Rock salt & pepper
To make:
• Boil potatoes until soft (around 15-20 mins)
• Pre-heat the oven to 200c
• Once boiled strain and pop into a lined oven dish
• Use a utensil or base of a mug to crush the potatoes
• Coat in olive oil and a light seasoning and pop in the oven for around 30-40 mins or until golden brown
• Once ready, top with salt, pepper, sumac, a drizzle of tahina/tahini and pomegranate - you can also add some molasses if you wish to do so
