Gooey, melty, boozy sweet, deliciousness... this one isn't for the faint hearted, but is SO YUM; it's honestly the most delicious cake ever!
Ingredients:
Cake (4 inch):
• 95g plain flour
• 45g cocoa powder
• 100g caster sugar
• ¾ tsp bicarbonate of soda
• ¼ cup date molasses / syrup
• A pinch of salt
• 4 tbsp olive oil
• 120ml hot coffee
Ganache:
• 150ml double cream
• 50ml Bourbon
• 125g dark chocolate, chopped
To make:
1) Preheat oven to 180c / 160c fan
2) Grease and line a 4inch cake tin with baking paper
3) Add the dry ingredients to a bowl and mix well
4) Make a well in the middle and pour in the molasses and oil
5) Mix again then stir in the hot coffee
6) Bake for 30 - 35 minutes
7) Meanwhile in a pan on medium heat reduce some of the sour cherries / juice with a small amount of sugar to make a thicker consistency
8) Once the cake has baked, take out of the oven and allow to fully cool
9) To make the ganache add the chopped chocolate to a bowl
10) Slowly heat the cream on low and add bourbon
11) Pour this mixture onto the chopped chocolate and stir until smooth
12) Add a knob of butter to make this extra shiny (tip from Dad!)
13) Pop into a piping bag and stick in the fridge for a few minutes*
14) Slice the cake in half and top with some of the ganache and add sour cherries
15) Add the top layer and finish with ganache and chocolate shavings... enjoy!!
* I wanted my ganache to ooze down the cake, but leave it in the fridge for longer if you want a firmer consistency
